The center of AGS has a colloquial style, which has been preserved since the 19th century, but still contemplates a contemporary style typical of the 21st century.
The name of this state is because the first settlers realized the presence of turbulent waters in that area, so years later it would receive the name of Aguascalientes, something that I call the attention of this state is its amazing "Fair of San Marcos"
The city of Aguascalientes celebrates annually at the end of April and beginning of May the National Fair of San Marcos, the most important in the country; which is called by many as "The Fair of Fairs" or "The Fair of Mexico." The San Marcos Fair has its origins in a mainly agricultural and livestock fair, started in 1828 and that was originally celebrated in the month of November, it is celebrated in the Garden of San Marcos near the state capital.

In this celebration you can enjoy bullfighting (to which I could not enter for being poor: 'V) the participation of several renowned artists, with performances of each, daily in the palenque, something like what is done in the fair of San Isidro here in the State of Mexico (more precisely, in Metepec = D) rooster fights free artistic presentations in the theater of the town, agricultural and livestock exhibition in the Megavelaria and the coronation of the queen of the fair.

Another great attraction of this state is the hundreds of pilgrimages from all over the country to its diocese by mid-August, which covers the territory of Aguascalientes and part of Zacatecas and Jalisco, an event that I had the opportunity to attend was the ENJES a national meeting of young people held on the Island of San Marcos or Megavelaria.
In particular, the food is not very different from traditional Mexican food such as traditional flutes, golden tacos, enchiladas very typical of the state, accompanied with pickles of pork and vegetables. They also offer tamales, atoles, tostadas, pozole, sopes and others, although it is worth noting that in other parts of the state there are different foods which make the gastronomy of the same as their gorditas chiqueadas, stuffed with stews such as chicharrón, tinga, moronga, beans , chile relleno, mole, rice, etc.
In the municipality of Calvillo, their preparations with guava are famous, as they are one of the products of the region. You can find ates, sweets, cakes, jams and liqueurs of this fruit. Due to the presence of dams, seafood restaurants are already typical.
But undoubtedly one of the most representative dishes, can be found in the capital of the state, which would be the cakes of carnitas, some of the best birrierías and the incomparable "Tacos de Colores", which are very delicious I tell you from experience , when I first heard "colored tacos" I was surprised °-° but come and try them =D
